We often say, “Here comes the bougiourdi,” referring to a written notice—usually for payment—much like the orders once delivered by Ottoman officials centuries ago.
But bougiourdi also has a much more delicious meaning when friends gather around a table—particularly in Thessaloniki. It’s the name of a spicy, oven-baked appetizer made with feta, tomatoes, and hot peppers. Think of it as a Northern Greek take on fondue: quick to prepare, full of flavor, and perfect for sharing with friends over toasted bread.
Feta Bougiourdi Recipe
Ingredients:

200g feta, in one block

100g kasseri cheese, grated

2 tomatoes, diced

1 green hot pepper (long, horn-shaped), thinly sliced

A pinch of boukovo (Greek chili flakes)

1/2 tablespoon dried oregano

30ml olive oil
Instructions:

Preheat the oven to 200°C (390°F).

In a small ovenproof dish, place the feta, then top with tomatoes, pepper, and chili flakes.

Sprinkle the grated kasseri over everything and bake for about 15 minutes, until the cheese is melted and bubbly.

Remove from the oven, drizzle with olive oil, and sprinkle with oregano.

Serve immediately with slices of toasted bread.
